THE GREG SMITH FAMILY'S LASAGNA 
1 lb. ground beef
1 clove garlic = 1/2 tsp. garlic powder
1 tbsp. chopped parsley
1 tbsp. basil
1 tbsp. salt; optional
2 c. tomatoes
2 (6 oz.) cans tomato paste
1 (10 oz.) pkg. lasagna noodles
2 (12 oz.) cartons cottage cheese
2 beaten eggs
1 tbsp. salt; optional
1/2 tsp. pepper
1 tbsp. chopped parsley
1/2 c. Parmesan cheese
1 lb. Mozzarella cheese (3 pkg. sliced thin)

1. Brown meat slowly; spoon off excess fat.

2. Add next 6 ingredients to meat; simmer uncovered until thick, 45 minutes to 1 hour. Stir occasionally.

3. Cook noodles in boiling water until tender. Drain, rinse.

4. Combine cottage cheese with next 5 ingredients.

5. Use 13 x 9 x 2 baking dish.

Place thin layer meat sauce in dish.

Then layer of noodles.

Spread 1/2 cottage cheese mixture over noodles.

Add 1/2 Mozzarella cheese.

Add 1/2 meat.

Repeat layers.

Bake in moderate oven (375 degrees) for 30 minutes. Let stand 10-15 minutes before cutting.
