CINNAMON FROSTED ZUCCHINI BARS 
1 3/4 c. all purpose flour
1 1/2 tsp. baking powder
3/4 c. butter
1/2 c. sugar
2 eggs
1 tsp. vanilla
2 c. shredded zucchini
1 c. coconut
3/4 c. chopped walnuts

Grease a 15 x 10 x 1 inch baking pan. Mix together flour and baking powder. Set aside.

In a large bowl, beat butter with an electric mixer on medium speed for 30 seconds, add sugar beat until fluffy and add eggs and vanilla, beat well. Stir in flour mixture. Stir in zucchini and coconut. Pour into pan. Bake at 350 degrees for 30 minutes or until toothpick comes out clean. Cool completely in pan on wire rack. Drizzle cinnamon icing onto bars.

CINNAMON FROSTING:

2 tbsp. butter, melted
1 tsp. ground cinnamon
1 tsp. vanilla

Beat until smooth. 137 calories.
