RED BEANS AND RICE 
2 c. red beans
1 c. celery
1 c. chopped onion
2 lb. smoked sausage (Lil' Smokies), cooked and chopped
Salt to taste
1/2 tsp. red pepper
1 tsp. oregano
1/2 tsp. thyme
1/2 tsp. basil
2 cloves garlic

Soak beans in water overnight. Put all ingredients into crockpot. Cover with water and simmer until beans are cooked, 2 to 4 hours. Add water, if needed. Serve over rice with French bread.
