JUDGE BILL'S CHILI | |
3 garlic cloves, minced 2 tbsp. vegetable oil 4 lbs. hamburger 6 lg. onions 4 lg. green peppers 3 (1 lb. each) cans crushed tomatoes 4 (1 lb. each) cans red kidney beans, drained 2 (6 oz. each) cans tomato paste 1/2 c. chili powder 1 tsp. white vinegar 3 dashes cayenne pepper 3 whole cloves 1 bay leaf Salt and pepper to taste Chop onions and peppers into small pieces. Cook garlic in oil until golden brown. Crumble hamburger in pieces and cook 10 minutes, breaking up to brown evenly. Pour off some of the oil and drippings into a large soup pot and cook chopped onions and peppers until tender. Add the cooked hamburger, tomatoes, kidney beans, tomato paste, chili powder, vinegar, cayenne pepper, cloves, bay leaf, salt and pepper. Cover and cook over low heat at least one hour. If too dry, add additional tomatoes. If too much liquid, uncover and simmer longer. |
