CHICKEN HAM PINWHEELS
2 whole lg. chicken breasts, (about 2 lbs. total), skinned & boned
1/8 tsp. dried basil, crushed
1/8 tsp. salt
Dash of pepper
Dash of garlic salt
4 thin slices fully cooked ham (about 3 oz.)
2 tsp. lemon juice
Paprika
Party bread
Assorted crackers

Rinse chicken; pat dry. Place 1 whole chicken breast between 2 pieces of clear plastic wrap; pound to 1/4 inch thickness. Repeat with remaining chicken. Combine basil, salt, pepper and garlic salt; sprinkle on chicken. Cover each chicken breast with half of the ham; roll up from long side.

Place rolls, seam side down, in a 10 x 6 x 2 inch baking dish. Drizzle with lemon juice; sprinkle with paprika. Bake in a 350 degree oven for about 30 minutes or until tender. Cover and chill; cut into 1/2-inch-thick slices. Serve with party bread and crackers. Makes about 24 slices.
