MEXICAN LASAGNA 
1 lb. ground beef
1 can tomatoes
Taco seasoning mix
12 oz. cottage cheese
1 1/2 c. shredded Cheddar cheese
2 eggs
12 flour tortillas
Durkee French fried onions

Brown ground beef; add tomatoes and taco seasoning; simmer 5 minutes. Stir in 1/2 onion rings. Mix cottage cheese and 1 cup Cheddar cheese and eggs; place 3 tortillas in bottom of slightly greased 9 x 13 x 2 inch pan; add 4 more tortillas along sides. Top with meat mixture and 3 more tortillas; then cheese mixture. Bake, covered, at 350 degrees for 45 minutes. Sprinkle with remaining cheese and onions and bake 5 more minutes. Garnish with lettuce and tomatoes and serve with sour cream.
