3 c. grated zucchini, skin included
1 c. Bisquick
1/2 c. Parmesan cheese
1/2 c. chopped onion
1/2 tsp. salt, pepper, and oregano
2 tbsp. parsley
1/2 c. oil
4 eggs

Mix all ingredients together and pour into buttered casserole or pie dish. Bake at 350 degrees for 45-50 minutes, uncovered. Test; center should be firm and dry. An 8 x 8 inch or 9 x 9 inch square pan may be used.
