1 envelope Lipton onion soup mix
2 lb. potatoes, quartered
1/3 c. vegetable oil

Preheat oven to 450°F. In large plastic bag, add all ingredients. Close and shake until potatoes are evenly coated. Empty potatoes in shallow baking dish. Stir occasionally.

Bake 40 minutes or until tender. Garnish with chopped parsley.

Yield: 8 servings.
