TUNA MELT 
1 can (6 1/2 oz.) water-packed tuna, drained
1/4 c. lowfat cottage cheese, blended
1/4 c. carrot, grated
1 tbsp. red onion, minced
1 tbsp. lemon juice
1/4 tsp. mustard
1 tsp. pepper
2 English muffins, split and toasted
2 oz. part-skim Mozzarella cheese, grated

Microwave:

Combine all ingredients except muffins and cheese. Spoon tuna mixture onto muffin halves and top with cheese. Place on paper towel or microwave-proof plate.

Microwave on HIGH until cheese is melted 35 to 45 seconds. Garnish with a little grated carrot and serve hot. Substitutions: Canned salmon, imitation crab meat.

Since microwave ovens vary in power, you may need to adjust your cooking time.
