DATE FILLED COOKIES 
1 c. brown sugar
1 c. shortening (1/2 butter)
1/2 c. buttermilk
1 tbsp. baking soda in buttermilk
2 1/2 c. flour
2 c. quick oats
1 tsp. vanilla

Chill dough before rolling out. Use cutter to make circles. Top a circle with filling and cover with a second circle and press around edges to seal. Bake at 375 degrees on greased cookie sheet until light golden brown.

FILLING:

1 c. cut up dates
2/3 c. boiling water

Boil a few minutes until thick. Add: 1 tbsp. butter

Boil until slightly thickened.
