JUMBO RAISIN COOKIES | |
2 c. raisins 1 c. water 4 c. sifted flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1 c. shortening 1 3/4 c. sugar 2 eggs, beaten 1 tsp. vanilla 1 c. chopped nuts Bring raisins and water to a boil, boil until raisins are plump (3 minutes). Cool. Sift flour, baking powder, and spices together. Cream shortening and sugar until light and fluffy; add eggs and vanilla and mix well. Stir in raisins and remaining water, gradually add flour mixture and stir in nuts. Bake at 375 degrees for 12 to 15 minutes. |
