JUMBO MEATBALLS | |
1 lb. ground beef 1/2 lb. ground pork 1/4 c. milk 1 egg 1/4 c. bread crumbs 1/4 c. chopped onion 1 tbsp. catsup 2 tbsp. chopped parsley 1 1/2 tsp. salt 1/2 tsp. pepper 1/4 c. bacon drippings 1/4 c. bouillon or water Mix all ingredients, except bacon drippings and bouillon. Shape in 1 1/2 inch balls. Refrigerate at least 1 hour. Brown meatballs in hot drippings, add liquid, and cover pan. Cook over low heat 45 minutes or until meat is cooked. Remove meatballs to warm dish. For gravy, thicken drippings with a paste of flour and water. Yield: 6 servings. |
