CUCUMBER SALAD 
3 to 4 firm cucumbers
1 tbsp. coarse salt (Kosher-style)
1/2 c. white vinegar
1/4 c. cold water
1 tbsp. sugar
1 tsp. salt
1/4 tsp. white pepper
2 tbsp. fresh dill or parsley

Pare cucumbers, score with tines of fork. Slice paper thin. Place in large bowl, sprinkle with coarse salt. Cover with a plate that will press down on cucumbers. Leave at room temperature for 1 1/2 hours. Drain, dry on paper towels. Combine vinegar, water, sugar, salt, and dill or parsley. Add cucumbers to this mix and chill for several hours.
