COCONUT CREAM PIE 
1/3 c. flour
2/3 c. sugar
1/4 tsp. salt
2 c. milk
1 c. coconut
3 slightly beaten egg yolks
2 tbsp. butter
1/2 tsp. vanilla
1 (9 inch) baked pie shell

MERINGUE:

3 egg whites
6 tbsp. sugar

Mix in large glass bowl flour, sugar, salt, milk, egg yolks. Cover bowl with wax paper and cook in microwave oven on normal high setting for 7-9 minutes. Take out of oven; stir briskly with wire whip every 3 minutes until pudding seems thick. Add coconut, butter, and vanilla. Mix. Pour into baked pie shell.

MERINGUE: Beat egg whites until stiff. Add sugar, beat until dissolved. Cover pie completely with meringue. Brown at 450 degrees for approximately 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
