YEAST BISCUITS 
1 envelope active dry yeast
3/4 c. lukewarm water
2 c. flour
1/2 tsp. salt
2 tbsp.
3 tbsp. melted butter

Dissolve yeast in warm water. Combine dry ingredients and sift together. Pour yeast and melted butter in flour mixture. Knead to a smooth dough. Roll out about 1/2 inch thick on lightly floured board. Shape into biscuits 1 1/2 inch in diameter. Arrange on lightly greased baking sheet, let rise in warm place for 30 minutes. Bake at 425 for about 12 minutes. Serve and butter while hot. Makes 12 to 18 biscuits. (For variety cut smaller or different shaped biscuits).

Brush with garlic butter, or cinnamon and sugar butter, etc., across tops before baking.

Fry in deep fat at 375 degrees for 2 or 3 minutes (turn while frying) drain. Sprinkle cinnamon and sugar or glaze. Better yet, drain and serve with a dish of apple butter on the table for individuals to put their own apple butter on while fried biscuits are hot.
