ICE CREAM CAKE 
1 stick butter, melted
1 c. brown sugar
1 c. coconut
1/2 c. pecans, chopped
4 c. Rice Chex, crushed
1/2 gal. vanilla ice cream, sliced

Combine first two ingredients and heat until sugar is dissolved. Add remaining three ingredients. Spray 9" x 13" pan with Pam; press 1/2 mixture into pan. Press in 1/2 gallon sliced vanilla ice cream. Press the remaining mixture on top. Freeze until ready to serve.
