SWEET AND SOUR BEANS 
2 c. cut up and cooked green beans, reserve 1/4 c. liquid
6 strips bacon, cut up and brown until crisp

Saute 1/2 cup minced onion in bacon grease. Add 1/4 cup vegetable liquid and 2 tablespoons flour. Stir and smooth and add 1/4 cup vinegar, 1 teaspoon salt, 2 tablespoons sugar and 1/4 teaspoon pepper. Serve hot.

The same sauce can be used for Hot German Potato Salad, using boiled sliced potatoes instead of beans.

"Sweet and Sour Beans", "German Beans", or often referred to as just "Sour Beans" were a favorite of the Michels family. The bacon-vinegar combination is prevalent in German cooking.
