RHUBARB SHORTCAKE | |
4 c. rhubarb 3/4 c. sugar 3 tbsp. butter 1 c. flour 1 tsp. baking powder 1/4 tsp. salt 1/2 c. milk 1 c. sugar 1 tbsp. cornstarch 1/4 tsp. salt 1 c. boiling water Place cubed rhubarb in 9x9 inch pan. Cream sugar and butter. Mix flour, baking powder and salt, add milk and flour mixture to cream mixture. Spread over rhubarb. Combine 1 cup sugar, 1 tablespoon cornstarch, and 1/4 teaspoon salt. Sprinkle over top. Pour 1 cup boiling water over it. Bake in 350 degree oven for 1 hour. |
