HERB DRESSING | |
1/2 c. olive or salad oil 2 tbsp. mild vinegar 1 tsp. salt 1/2 tsp. fresh ground pepper 1/2 clove garlic Worcestershire sauce Fresh herbs Mix first 5 ingredients in a bottle or a jar with a cover. Add a few drops of Worcestershire sauce and 1 tablespoons finely chopped fresh herbs using one of the following or a combination: basil, chervil, chives, mint, tarragon, thyme. Dried herbs may be substituted but remember dried herbs are at least 3 times as strong as fresh herbs. So measure accordingly. To bring out the flavor of dried herbs soak them in lemon juice or wine before adding them to a dish. |
