CINNAMON APPLE SALADS 
1/2 c. red cinnamon candies
2 c. water
6 sm. tart apples, peeled & cored
1 (3 oz.) pkg. cream cheese, softened
2 tbsp. milk
1 tsp. lemon juice
1 (8 1/4 oz.) can crushed pineapple, drained
1/3 c. snipped pitted dates
2 tbsp. chopped walnuts
Lettuce

In 3 quart saucepan cook and stir cinnamon candies in water until dissolved. Add apples and cook slowly, uncovered, for 15-20 minutes or just until tender, turning once during cooking. Chill apples in syrup several hours, turning once.

Blend together cream cheese, milk and lemon juice until smooth. Stir in pineapple, dates and walnuts. Drain apples, stuff center of each apple with some of the cream cheese mixture. Serve on lettuce-lined plates. Makes 6 servings.
