CHICKEN AND BISCUITS 
6-8 chicken breasts
6 med. carrots, sliced round
4 med. potatoes, cubed
1 pkg. frozen peas or 1 (15 or 16 oz.) can
2 chicken cubes
2 tbsp. cornstarch
1 sm. box Bisquick biscuit mix

In a large pot, cook the chicken and add the chicken cubes. While chicken is cooking, in another pot cook the carrots and potatoes. Cook the carrots about 10 minutes before adding the potatoes. A small onion can be cooked with the chicken if desired. When chicken is done, drain the broth and reserve. Remove all bones from chicken or use boneless breasts.

Layer the large baking pan or roaster with the chicken breasts. Put it all into the pan, covering the bottom very well. Put the broth back on the stove over low heat. Mix the cornstarch with small amount of water and stir into the broth. It will thicken slightly. It will not be stiff. Add the peas, carrots and potatoes. When it is hot enough, pour into baking pan over the chicken, being careful not to fill the pan too full so it will not run over in the stove. Salt and pepper to taste. Add about 1/4 stick of butter in the broth.

Prepare the biscuits according to directions on the Bisquick box making sure to have about 10 or 12 biscuits. Put the biscuits on top of the broth mixture and bake in a 350 degree oven until the biscuits are nice and brown on top. You can also make your own recipe for biscuits or use canned biscuits. Can pour extra broth over top of biscuits after they are baked. Serves 6 to 8.
