PHYLLO CHICKEN 
1 c. mayonnaise
2/3 c. chopped green onions
3 1/2 tbsp. lemon juice
1 sm. garlic clove, minced
3/4 tsp. dried tarragon
8 chicken breasts, halved, skinned, boned
1/4 tsp. salt
1/8 tsp. pepper
16 sheets phyllo pastry
3 1/2 tbsp. Parmesan cheese
Cooking spray

Combine first 5 ingredients and set aside. Sprinkle chicken with salt and pepper. Place 2 sheets of phyllo on a sheet of plastic wrap, spray each with cooking spray. Spread about 3 tablespoons of mayonnaise mixture on both sides of chicken; place breast diagonally on one corner of stacked sheets. Fold sides over and carefully roll up pastry.

Place seam side down on ungreased jelly roll pan. Repeat with rest of chicken. Spray tops with cooking spray. Sprinkle with Parmesan cheese. Bake at 350 degrees for 40-45 minutes or until chicken is done. Serve immediately.
