SALMON CROQUETTES 
1 (lg. can) salmon (red)
1 sm. potato, boiled and mashed
1 egg, beaten
1 sm. onion, chopped fine
1 celery stalk, chopped fine
1/4 green pepper, chopped fine
1/4 c. evaporated milk or less
Salt and pepper to taste
Shortening for frying

Mix ingredients well. Form patties. You may roll patties in cracker meal and/or bread crumbs. Pan fry in shortening until golden brown. Approximately 6 servings.
