SPINACH PIE 
4 pkg. (8 oz.) frozen spinach
1 lb. feta cheese
4 eggs, separated
3/4 lb. butter
White pepper
3 bunches green onions
Sm. amount dill or parsley
3/4 lb. butter
1 lb. Phyllo

Drain spinach thoroughly (best to drain in colander overnight). Chop onions or other greens. Crumble cheese and mix with melted butter and pepper. Beat egg whites until stiff and add yolks. Fold into mixture. Add spinach, dill or parsley, and fresh onions. Butter 15 x 11 inch by 2 1/2 inch pan and place half the Phyllo on bottom of pan, buttering each Phyllo. Pour spinach mixture on top, cover with rest of Phyllo. Bake at 350 degrees for 1 hour.

Or: Make triangle pies for individual pieces by buttering one sheet of Phyllo, folding over 3 times. Place 1 teaspoon of mixture in center and fold into a triangle. Brush lightly with butter. Bake at 350 degrees for about 1/2 hour or until golden brown.
