CHRISTMAS CARROT LOAF 
1 1/2 c. sifted flour
1/2 c. sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger (optional)
1/4 tsp. salt
2 eggs, beaten
1/4 c. raisins
1/4 c. oil
1/4 c. milk
1 c. shredded carrots
3/4 c. coconut
1/4 c. raisins
1/4 c. maraschino cherries, chopped and drained
1/4 c. chopped pecans

Sift the flour, sugar, baking powder, and soda together with spices in large bowl. Combine eggs, oil, and milk in bowl. Mix well. Add dry ingredients; beat well. Stir in remaining ingredients; turn into greased loaf pan. Bake at 350 degrees for 50-60 minutes.
