RED BEANS AND RICE 
1 pkg. cajun red beans, spices included (I shake about half of the pepper off before using, too hot for Okies!)

Add to defatted ham stock, boil until tender.

1 c. celery, chopped
1 c. onion, chopped
3/4 green pepper, chopped

Saute above in 1/4 cup water, add to beans, continue to simmer. Add 2 tablespoons cajun seasoning. (Careful, just add a little at a time, gets hot quick.) Pepper and salt to taste. Simmer until very thick. Serve over rice.
