VODKA CANTALOUPE 
1 cantaloupe, peeled and cut into bite-sized chunks
1/4 cup sugar
1/4 cup vodka
pinch salt

Cantaloupe has been in the news too often lately because it is sometimes linked to Listeria or salmonella outbreaks.

If you already have a cantaloupe on hand but don't want to throw it out and there have been no recalls for the brand or batch that you have, then the following treatment may be reassuring and might even bring a new favorite to your Summer dessert selection!

The longer vodka is in contact with the cantaloupe, the less likely it is that any bacteria will survive. You can also add a teaspoon of Vitamin C or Fruit Fresh (ascorbic acid) or even lemon juice because these make for an unfavorable environment for bacteria.

First, wash the outside of the cantaloupe under cold running water. Dry and wipe the cantaloupe rind with vodka before cutting.

Combine 1/4 cup vodka, 1/4 cup sugar and salt in the bottom of a small bowl. Dip cut cantaloupe in the liquid, coating all sides, just a few cubes at a time. Make sure all sides are coated.

For a refreshing treat, freeze the cubes for 20 minutes before serving. Or, if frozen until they can just still be pierced with the tip of a knife, you can blend them to a slushy puree and serve in a tall glass with honey to taste, a twist of lemon and a splash of whipped cream or yogurt (any or all of the above!).

Tip: This can be frozen, vodka and all in a ziploc bag until ready to use. Turn several times while in the freezer.
