APPLE SALAD 
1/2 c. apples, thinly sliced
1/2 c. low fat cottage cheese
2 tbsp. diet salad dressing
1/2 c. grated carrots
1/2 c. celery, chopped fine
dash of salt
1 c. torn lettuce leaves

Toss together the first 6 ingredients. Place about 1/2 c. portions on lettuce.

This is a good recipe for diabetics.
