CHICKEN FRIED RICE | |
1 1/2 c. raw, diced chicken 2 c. cooked rice 1/4 c. diced onion 1/2 c. diced celery 4 tbsp. cooking oil 2 tbsp. soy sauce 1 tsp. sugar 2 or 3 slightly beaten eggs Heat oil in pan. Add onions and celery, stir fry for 2 minutes. (Stir frying uses oil which is super hot.) Add chicken and stir fry for 5 minutes. Add cooked rice and stir fry for 7 or 8 minutes. Add soy sauce, sugar, tasting to check seasoning. Pour beaten egg on top o rice. Stir fry for 3 or 4 minutes, or until egg is cooked. Makes 4 servings. |
