WEST TEXAS PECAN PIE 
1 (9 in.) unbaked pie shell
1/4 c. butter
1/3 c. white syrup
1 1/2 c. sugar
3 eggs, beaten
1 c. chopped pecans
1/2 tsp. vanilla

Combine butter, syrup and sugar. Heat until butter is melted and sugar is dissolved (slow boil). Stir frequently. Remove from heat and slowly add eggs, vanilla and pecans. Using electric hand mixer. Pour into pie shell. Cook at 350 degrees for 10 minutes, then reduce heat to 300 degrees for 30 minutes. This is a good recipe to double or even triple.
