HOMEMADE BREAD 
2 lb. bag unbleached or enriched flour
1 rounded tbsp. yeast
1 tbsp. vinegar
1 tbsp. salt
2 1/2 c. water, lukewarm

Put flour in large pot or bowl. Make a well in the center and add yeast, vinegar and 1/2 cup water. Stir to a paste in center, cover with a towel and put in warm place for 15 minutes. Add salt and slowly add 2 cups of water until a clean ball of dough is formed. Place in a pot or bowl again and cover. Allot to raise double in size, about 1 to 1 1/2 hours.

Put dough on a lightly floured board or surface and fold in thirds several times. Put in loaf pan that has been sprayed with Pam. Cover with a towel and allow to raise double again about 3 3/4 hours. Heat oven to 400 degrees. Wet your hands and go over the top of the bread. Make a + on the surface and put in the preheated oven. It should bake 3/4 to 1 hour.

Remove the bread from pan and continue baking so that bottom gets brown and crusty. When done, wet hands and go over top of bread to make it shiny.
