RHODA'S BLUEBERRY ICE CREAM | |
1 basket of fresh blueberries (about 2 c.) 1/2 c. sugar 1/2 c. purple grape juice 1/2 c. lemon juice 1 can Eagle Brand 3 eggs 1 tsp. vanilla flavoring 1 tsp. red food coloring Milk to fill freezer can to proper depth Place blueberries, sugar, grape juice and lemon juice in blender - blend for a few seconds to break up the blueberries. Beat eggs and add lemon juice, flavoring, and Eagle Brand to this mixture, then add blueberry mixture and food coloring and place in freezer can, add milk to desired level. This makes one gallon of ice cream. Freeze according to freezer directions. Thawed frozen blueberries can be substituted. Note: Don't leave out the red coloring or you will be disappointed in the looks of the ice cream, as blueberries tend to make a gray color in food. |
