BROCCOLI CASSEROLE 
1 onion, chopped
1/2 c. milk
2 tbsp. butter
1 can cream of chicken soup
3 c. cooked minute rice
1/2 lb. Velveeta cheese (or Cheddar)
Potato chips
Grated cheese

Saute onions in butter. Add soup, milk, and Velveeta cheese. Heat slowly until cheese melts. Fold in cooked rice. Add chopped broccoli. Put in casserole dish. Cover with grated cheese and crushed potato chips. Bake at 350 degrees for 30 minutes.
