BAKED CARROTS 
5-6 c. sliced (1/4 inch thick) carrots (approximately 2 lbs.)
6 slices Swiss cheese

SAUCE:

1 sm. onion, minced
4 tbsp. butter
3 tbsp. flour
1 tsp. salt
1 tsp. chili powder
2 c. milk

Blanch carrots in covered pan or dish until tender-crisp. Layer half of the carrots in shallow 2 quart baking dish; cover with half the cheese. Repeat layers.

Sauce: Saute onion in butter for 2 minutes; blend in flour, salt, and chili powder. Cook, stirring for 1 minute. Add milk. Cook and stir until thickened. Pour sauce over carrots.

TOPPING:

1 c. fresh bread crumbs
2 tbsp. melted butter
1/2 c. crumbled bacon

Mix crumbs and butter together. Sprinkle over carrots. Top with bacon. Bake for 25 minutes at 350 degrees.
