CHICKEN PUFFS 
2 tbsp. butter
1/4 c. boiling water
1/4 c. flour
1/4 tsp. salt
1 egg
1/4 c. Swiss cheese, shredded

In a saucepan, melt butter in boiling water. Add flour and salt, stir vigorously. Cook and stir until mixture forms a ball that doesn't separate. Add egg, beat vigorously until smooth. Stir in cheese. Drop dough onto greased baking sheet, using one level teaspoon of dough for each puff. Bake in 400 degree oven for 20 minutes. Remove puffs from oven. Cool. Split in half. Fill with filling.

CHICKEN FILLING:

2 c. chicken, turkey or ham, minced and cooked
1/4 c. celery, minced
2 tbsp. sauterne
1/4 c. mayonnaise
1/2 tsp. salt
Dash pepper

Mix all ingredients together. Place 2 teaspoons of mixture in each puff.
