MOCK PECAN PIE 
4 or 5 egg whites
1 c. sugar
1 tsp. baking powder
1 tsp. vanilla
1 c. pecans, chopped
20 to 25 Ritz crackers

Beat egg whites until stiff, fold in sugar, baking powder and vanilla. Roll out Ritz crackers, fold into egg whites along with chopped pecans. Pour into a well buttered pie plate. Bake 35 minutes at 350 degrees. When cool, cover with 1/2 pint heavy whipped cream. Refrigerate 24 hours for best results. Crackers must be Ritz brand. Use 5 whites and 25 crackers for 10 inch pie plate. Use 4 whites and 20 crackers for 8 or 9 inch pie plate.
