LASAGNE 
MEAT SAUCE:

1/4 c. olive oil
1/2 c. butter
1 med. onion, chopped
2 lbs. ground beef
1 c. canned tomatoes
1/2 c. tomato puree
2 tbsp. tomato paste
4 cloves garlic
3 tbsp. parsley
2 stalks celery, chopped
1 sm. carrot, chopped
Salt & pepper to taste

ADDITIONAL INGREDIENTS:

1 (8 oz.) box lasagne noodles
1 lb. Ricotta cheese
1 lb. Mozzarella cheese, grated

Heat olive oil and butter in a large skillet and add onion and ground beef. Saute until meat is brown and onions are clear. Add the next 5 ingredients and stir until heated. Add celery, carrot and salt last. Cover and simmer for 1 hour.

Prepare lasagne according to directions on package. Drain and hang over the side of a colander to cool. This will make later handling easier. When the meat sauce is ready, layer in a 13"x9" dish in the following way:
lasagne
meat sauce
Mozzarella cheese
Ricotta cheese.

You should have enough ingredients to make about 3 layers. I end with the ricotta. Bake at 375 degrees for 30 minutes. This serves about 8 people although they'll definitely come back for seconds.
