PICKLED BEETS 
1 pt. white vinegar
1 c. water
2 c. sugar
1/2 box Durkee's pickling spice
3 lb. red beets

Cook beets with tops or until tender. Cool. Peel beets, cut off tops. Place whole or cut beets in sterilized jars. Mix in large saucepan vinegar, water, sugar, and pickling spice. Bring to boil. Simmer 15 minutes. Pour over beets in jar. Seal. Process hot water bath 30 minutes.

Excellent! Very easy and tasty. If you don't have Durkee's, use 2 tbsp pickling spice.
