OVERNIGHT MERINGUES | |
1/8 tsp. salt 2 egg whites 2/3 c. granulated sugar 1 c. or less finely chopped pecans 1 c. or less semi-sweet chocolate bits Preheat oven to 350°F before starting this recipe. It must be hot when the cookies go in because you will immediately turn off the oven and let the cookies slowly cook for 8 hours (overnight). In dry mixing bowl beat salt and egg whites until foamy. Add sugar, a little at a time, until mixture is very stiff. Fold in nuts and chocolate bits. Drop by heaping teaspoons on parchment or waxed paper. Put into hot oven on cookie sheet and keep oven door shut. Yields 30 cookies. |
