3-LAYERED HOLIDAY GELATIN DESSERT | |
1 large (6 oz.) or 2 small (3 oz. ea.) boxes strawberry flavored gelatin 1 (8 oz.) can crushed pineapple, undrained 1 (10-12 oz.) bag frozen strawberries 3 medium bananas, mashed 8 oz. sour cream 2 1/2 cups miniature marshmallows (can use up to 3 cups if desired) 1 1/2 cups boiling water 1. Place the gelatin in a glass mixing bowl, add the boiling water and stir well to completely dissolve. Let gelatin cool on the counter for about 30-60 minutes. 2. Add to the cooled gelatin, the can of undrained crushed pineapple, the frozen strawberries and the mashed bananas. Gently mix well. Mixture will be thick. 3. Place 1/2 of this mixture into an 8x8-inch glass rectangular dish and spread evenly. Place this into the refrigerator for about 1 hour to set. Stir occasionally the remaining gelatin mixture on the counter. 4. After 1 hour, remove refrigerated gelatin mixture. 5. Stir gently together the sour cream and miniature marshmallows. Place this on top of the refrigerated gelatin mixture and spread evenly. 6. Then place the remaining gelatin mixture from the counter over the sour cream and marshmallows. Refrigerate until completely set, about 4 to 6 hours. Best to leave overnight. 7. This creates the 3-layered holiday gelatin dessert (red gelatin on the bottom, sour cream/marshmallows in the middle, red gelatin on the top). Can serve with cool whip or fresh whipped cream. Enjoy and happy holidays! NOTE: Different flavored gelatins can be used for the holiday effect, such as cherry or raspberry. This recipe can be doubled and placed in a 9x13-inch glass dish.
