BEEF STROGANOFF 
1 1/2 lbs. trimmed round steak, cut into bite sized pieces
1/4 c. oil (safflower)
2 c. fresh mushrooms
1 sm. onion, chopped fine
1 bay leaf
1 tsp. salt
1 tsp. fresh ground pepper
1/4 c. tomato paste
3 tbsp. flour
1 c. beef broth
1/4 tsp. garlic
1/2 c. sour cream

In a large skillet brown the meat in the oil; add the mushrooms and the onions. Mix the remaining ingredients except the sour cream and pour over the meat. Bake, covered at 350 degrees for 1 hour. Remove from the oven and stir in the sour cream. Remove the bay leaf. Serves 4 to 6. Serve overe rice, noodles or toasted croissant halves.
