BECHAMEL SAUCE 
2 tbsp. butter
1 1/2 tbsp. flour
3/4 c. milk
1/2 tsp. salt
Dash hot pepper sauce
Dash nutmeg

In a small saucepan, melt the butter over low heat. Add the flour, stirring to keep the mixture smooth. Gradually stir in the milk, stirring constantly. Cook over low heat until mixture thickens. Remove from heat and stir in salt, hot pepper sauce and nutmeg. Mix well. Makes 1 cup.
