RICE PUDDING 
3 eggs
1 1/2 c. milk
3 tbsp. brown sugar
1/4 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon
1 tbsp. grated lemon peel
1/2 c. raisins
1 1/2 c. cooked brown rice
Milk or cream

Preheat oven for 325 degrees. Grease a 1 1/2 quart casserole. Beat lightly eggs. Stir in milk, brown sugar, salt, vanilla, cinnamon and lemon. Add raisins, then slowly stir in rice. Place dish in large pan. Pour water into pan until water is 1 deep. Bake 50 minutes. Serve warm with milk. 4 servings.
