PEANUT BUTTER BALLS 
1 tbsp. + 1 tsp. butter
2 tbsp. evaporated milk
1/2 tsp. vanilla
1/8 tsp. salt
1 1/2 - 2 c. powdered sugar, sifted
1 c. peanut butter
1 tbsp. dark corn syrup
1 (6 oz.) pkg. semi sweet chocolate pieces, melted
1 c. peanuts, fine chopped

In saucepan, melt butter over very low heat. Stir in evaporated milk, vanilla, and salt; mix well. Remove pan from heat and gradually add the sifted powdered sugar. Stir until mixture is thick, smooth and creamy.

Turn onto a board, lightly sprinkled with powdered sugar. Work with hands until a dough consistency is reached. Add peanut butter and corn syrup; mix well.

Shape dough into balls, dip in chocolate and roll in peanuts. Refrigerate until firm. Makes 48 balls.
