CHICKEN SALAD WITH HONEY -
MUSTARD VINAIGRETTE
 
1 c. olive oil
2 cloves garlic
3 chicken breast halves, deboned & julienned
8 oz. fresh or dried tortellini
1 green pepper, diced
3 celery stalks, diced
1 sm. red onion, thinly sliced
1/3 lb. smoked Gouda, julienned
2 tbsp. Dijon mustard
1 tsp. dry mustard
3/4 c. cider vinegar
1/4 c. honey
3 oz. Canadian bacon, cooked & julienned

1. Heat 2 teaspoons of the olive oil in skillet and saute garlic until brown. Remove.

2. Add chicken to hot oil and stir fry 3-4 minutes. Drain and reserve.

3. Cook tortellini according to package instructions. Do not overcook. Cool.

4. In salad bowl combine chicken, tortellini, green pepper, celery, onion, Gouda.

5. In small bowl whisk rest of olive oil, mustards, vinegar and honey.

6. Pour over salad and toss well.

7. Top with Canadian bacon and serve.
