STRAWBERRY BREAD 
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1 c. sugar
2 eggs or 3-4 whites
2/3 c. vegetable oil
2 tsp. grated lemon rind
1 1/2 c. sliced strawberries
3/4 c. chopped almonds or walnuts

Grease and lightly flour loaf pan or line about 16 muffin cups with paper liners. Preheat oven at 350 degrees.

In large bowl lightly beat eggs and mix in the oil and rind. Sift in sifted dry ingredients until just blended. Do not overbeat or bread will be tough! Fold in sliced berries and chopped nuts. Bake on center rack for 1 hour or done. Let cool 10 minutes before turning out.
