SWEET-SOUR PORK CHOPS 
1 tbsp. cornstarch
1/2 c. sugar
2 tsp. soy sauce
1/3 c. white vinegar
6 tbsp. pineapple juice (I also use 1/2 can of pineapple chunks)
16 lean center-cut pork chops
Salt and pepper to taste

Mix all ingredients, except the chops and the salt and pepper. Bring to a boil; cook until clear and slightly thick.

Brown chops, lightly seasoning with salt and pepper. Cover with the sauce.

Cook, covered, over low heat for 45 minutes to 1 hour, turning frequently. Yield: 8 servings.
