PEANUT BUTTER CUP COOKIES | |
1 stick butter 1/2 c. peanut butter 1/2 c. brown sugar 1/4 c. sugar 1 egg 1 2/3 c. flour 1 tsp. baking soda 1 egg white 1 tbsp. water 1 c. finely chopped unsalted peanuts 9 oz. pkg. bite size peanut butter cups Cream butter, peanut butter, brown sugar, sugar, and egg until light and fluffy. Combine flour and baking soda. Add to creamed mixture, blending well. Roll dough into 1 inch balls. Combine egg white and water. Beat with fork until foamy. Roll balls in egg white mixture, then in chopped peanuts. Place on ungreased cookie sheet and press with thumb in center, making a depression about 1 inch wide. Bake at 375 degrees for 8-10 minutes or until set. Remove from oven, cool on cookie sheet 1 minute. Unwrap peanut butter cups, place a cup in each warm cookie, pressing down slightly. Carefully remove from cookie sheet onto wire rack. Cool completely until cups are firm. Makes 37. |
