OVEN FRIED PARMESAN CHICKEN 
3 lb. frying chicken, cut up in pieces
1 c. flour
1/2 c. Parmesan cheese, grated
1 tsp. paprika
1 tsp. oregano
1/2 tsp. garlic powder
1 tsp. salt
1/2 tsp. pepper
4 tbsp. butter, cut in pieces
3/4 c. buttermilk

Preheat oven to 400 degrees. Line a 9"x13" pan with foil. Add butter to pan and put into heated oven to melt. Do not burn. Salt and pepper chicken. Put buttermilk in shallow bowl. Combine remaining ingredients in another bowl and mix to blend. Dip chicken into buttermilk, letting excess drip off, then into seasoned flour. Place skin side down in prepared pan. Bake, uncovered at 400 degrees for 30 minutes. Turn pieces, reduce heat to 300 degrees and bake 20 more minutes. Serves 6.
