PHILIPPINO CHICKEN | |
3 whole chicken breasts, split 6 oz. unsweetened pineapple juice 1 bay leaf, crumbled 1/4 c. vinegar 1/4 c. soy sauce Place the chicken pieces, skin side up, in a shallow roasting pan. Combine the remaining ingredients and pour over the chicken. Cover the pan with aluminum foil and place it in a hot (425 degree) oven. Bake, covered for about 30 minutes. Uncover and continue to bake for an additional 20 minutes or more, basting frequently until nearly all the liquid has evaporated and the chicken is a dark, rich color. Remove bay leaf. Makes 6 servings or 155 calories each. Low calorie. |
